Kelly’s Chicken Caesar Salad
• Romaine lettuce
• Purple onion
• Capers
• Vegan Chicken
• Kelly’s Croutons
• Just Crumbs
Caesar dressing
• 1 1/2 c. Vegan mayo
• 1/2 c. Cashews ( soak for 10 min)
• 1/4 Tsp. Mustard
• 4 or 5 cloves Garlic
• 1/4 Tsp. Maple syrup
• 2 Tbs. Lemon juice
• 2 Tbs. Capers and brine
• Blend until creamy
• Salt & pepper
• Thin with water
( PRO TIP) don’t skip this step
Sauté capers in grapeseed oil, fry until crispy, make extra you’re going to want more 😋This is what gives it a (salty anchovy umami flavor)
Use vegan chicken of your choice (I used Gardein) smother chicken in olive oil and fresh crushed garlic and grill on the bbq or a grill pan, salt and pepper.
Toss lettuce, onions grilled chicken, caesar dressing, capers, croutons, just crumbs and squeeze fresh lemon and you’re good to go!
